Cucumber and Avacado Soup

1 avocado
1 cucumber peeled and seeded
garlic
lemon juice
s and p
ice cubes
chicken bouillon or reduced stock
cilantro
radish

put avocado and cucumber in bowl with garlic and cilantro
blend with hand blender
add ice cubes and blend till crushed
add s and p and cilantro blend.
when it is done it will be smooth and thick. Too thick add more ice
I cut a radish into slivers and put it on top of soup as garnish. very nice

1 ripe avocado, 1 or 2 cucumbers cut into chunks (can keep the skin on if not waxed), 1 chicken bouillon cube, a handful of fresh cilantro, 1 tsp or less of garlic chili paste for a little heat, 2 cloves fresh garlic, a tbs or so of preserved lemons or if you don't have any use juice of a lime or lemon, 4 ice cubes, a little fresh ground pepper, add water near top......then blend. Et voila!

Jo-Anne's Breakfast Bread

Great bread for breakfast, full of fibre. Also a little sweet.
Recipe 
Starter

If you have a starter in fridge use it in the mix. Or start a starter the night before
200 flour
200 water
sprinkle of yeast
mix and put in fridge overnight
Weigh
1000 grams of flour split half and half white bread flour and multigrain flour
500 g liquid - buttermilk, water, reg. milk, or a combo of two.
25 to 30 g butter or oil Hazelnut oil is delicious in this bread
4 g yeast
24 g salt
50 to 100 g sugar or honey depending on how sweet you want it to be.
Add during the mixing...
raisins or other dry fruit
dates are good
nuts such as walnuts
Mix
weigh all in the mixer bowl starting with the liquid.
don't add fruit and nuts till the dough is formed
add fruit and nuts
sprinkle some cinnamon into the mix if you want
spray a big plastic bowl with a lid with oil. Add the dough
let sit covered for 45 min.
fold and turn once, don't abuse the dough
let sit covered another 45 min.
press out air gently and put in fridge or prepare to bake.
It can go in large bread tins or free form. The dough is pretty tight. All the multigrain. 
Dump on counter and divide in half.
Fold each half over itself and let it sit for 10 min.
Then...
pat down into a rectangle and start to roll it in on itself eliminating the edge.
when you get it rolled into a log pinch the seam and leave it on counter under a cloth for about an hour.
heat oven to highest heat. Use a stone for free form bread.
Bake
Bake for about 20 min at high heat then reduce heat to about 350. You can turn the loaves at that point since most ovens bake differently on each side. Reverse and reverse the loaves.
When they are done, leave them in with a spoon stuck in the oven door to let in some air.
Take out and cool on rack. 
This bread is best served toasted. It is a bit heavy but loaded with fibre and tasty.

Pizza Tonite! Aug. 30, 2012

Having pizza tonight for 8 people, small crowd, maybe 10.

Plan
dough made this morning. No starter last night
sauce made from frozen frankie tomatoes
cooked with chicken and piece of beef for flavor

Starter

tossed with carrots

Pizza
tomato sauce
white artichoke sauce
steak
chicken
sausage


Beverages
wine, need some
cold tea

Jo-Anne's Favourite Breakfast Bread

breakfast bread best toasted
1000 g flour split white and multigrain
500 g assorted liquid
milk, buttermilk, banana, water, cream etc.
25 g salt
5 g yeast
sugar depending on how sweet you need the bread
100 g butter or fat
raisins or dried fruit
nuts
dates
granola

measure liquid into mixer bowl
add flour
and other dry ingredients
mix
after coming together add fat a little at a time
increase mixer speed
mix till fat incorporated
add nuts and fruit

remove and let rise in plastic bin for 45 minutes
push down
rise another 45 minutes
put in fridge till ready to use
remove and turn bin over on counter to allow dough to fall out
press dough down gently and shape into a square
sprinkle dough with a mix of sugar and cinnamon
cut dough in half
roll each half and place dough in oil sprayed bread pan
let rise for half hour
convection oven turn on to 400
let heat for 15 minutes
put bread in oven
bake for 15 minutes
turn bread so back is front and switch loaves to opposite side
bake another 15 minutes at 350
check for done
if done, turn off oven and open door slightly to let moisture escape.
when oven cool remove loaves and take out of pan
they should fall out
let them cool on a rack
freeze till needed.
Best served toasted.

Really Good Meat Loaf

this is great for cheap cuts of meat, choose less fat meats or cut off fat and feed it to the dogs. Or leave it in for nicer gravy. If you grind your own meat, you know what you are getting.

Half and half beef and pork or lamb or chicken or combo ground in Kitchen Aid meat grinder
also grind pack of mushrooms and tomatoes and garlic into the mix, just stick them in the grinder.
then
Add to this mix
bread crumbs, seasoned works great or if you have bread, cut it up, toast it in toaster oven and add that instead.

eggs as binder
grated cheese is also nice
chopped half large onion
mix it up evenly and form into loaves and place in loaf pan
cover with bacon strips
and ketchup
bake till done
remove from loaf pan and use juice to make gravy
put flour and butter in skillet
stir till paste
put juice in skillet
stir
that is gravy but you can add gravy color

Make or buy mashed potatoes. Heat them up.
put a blob of mashed on the plate
place cooked hot meat loaf slice on the top
pour gravy over stack
add green peas to place
delicious

Banana Ice Cream


Ingredients

  • 6 (approximately 2 1/4 pounds) ripe bananas
  • 1 tablespoon fresh squeezed lemon juice
  • 3/4 cup light corn syrup
  • 1 vanilla bean, scraped
  • 1 1/2 cups heavy cream

Directions

Place bananas in freezer and freeze overnight. Remove bananas from freezer and allow to thaw for 45 minutes to 1 hour. Peel bananas and place in bowl of food processor along with the lemon juice. Process for 10 to 15 seconds. Add corn syrup and vanilla bean seeds and turn processor on. Slowly pour in the heavy cream. Process until smooth. Chill mixture in refrigerator until it reaches 40 degrees. Transfer mixture to an ice cream maker and process according to manufacturer's instructions. Place mixture in an airtight container and freeze for 3 to 6 hours before serving.

Coconut Chicken and Rice


Cheap Pork Scalopini


We get some cheap pork cuts in Proctors and Best Buy at the moment. They are unidentifiable as far as the cut of meat but since this recipe calls for pounded meat, it doesn't really matter.

Recipe Items:
Pork chunks
olive oil
bread crumbs
egg
flour
S and P
lemon or lime juice
white wine
garlic

Method:
Slice the pork into thin as you can get slices and pound them thin
use a plastic bag, put flour and seasoning in bag and dump in the pork slices
seal bag and bounce it around to coat all the pork

beat up the egg in a flat bowl
put bread crumbs in another flat bowl and line them up on the counter
heat oil in big fry pan
take coated pork and dip in egg, then in bread crumbs
place in fry pan
do all
flip pork in fry pan when brown on one side
when done, press on pork, should be firm
remove pork and keep fry pan hot
add wine

Italian Flour

You never know what you are going to find in the shops on Anguilla. Italian flour at the Unique trading store on Long Path. Wow.
It was a 50# bag. But I will freeze it.
Don't really know the grade but it is called Hotel and Restaurant flour so I must assume it. Is general purpose.
First test, scones and they were lovely.
